Oven-Fried Catfish Recipe

Ingredients:

2 lbs of catfish fillets; cut to serving size
1/4 c of melted butter (or margarine)
1 Tbsp of salt
1/2 c of milk
1 c of breadcrumbs (dry)

Instructions:

Heat the oven (500 degrees F). Combine milk and salt. Dip the fish onto the milk and roll on breadcrumbs. Place on a greased pan for baking. Drizzle the butter above the fishes.

Bake for 10-12 mins, uncovered. Serves 4.

Oven Fried Ocean White Parmesan Recipe

Ingredients:

1 lb of Ocean-White fish fillets (codfish, rockfish, sole fish, flounder fish…)
2 Tbsps of cornmeal
2 Tbsps of flour (plain)
1/4 tsp of paprika (or cajun)
Salt & Pepper (to taste)
1 Tbsp of cheese (Parmesan); grated
2 tsps of vegetable oil

Instructions:

Combine flour, cornmeal, cheese, salt, pepper, and paprika. Dredge the fish on the flour mixture. Grease a nonstick (baking) pan. Arrange the fish on the pan then drizzle oil.

Place inside the oven and bake for 8 to 10 mins, 450 degrees F.

Baked Fish With Orange-Chili Marinade Recipe


Baked Fish With Orange-Chili Marinade Recipe

Ingredients:

1/2 c of fresh OJ
1/2 c of cilantro leaves (fresh); chopped
2 pcs of garlic (cloves); peeled & minced up
1 Tbsp of oil (olive)
1 pc of pepper (Chipotle); chopped coarsely
1 & 1/3 lbs of fish fillets (thick)
Pepper (black and ground, to taste)

Instructions:

Mix together Chipotle, garlic, olive, cilantro and juice. Put fish in dish (glass) then submerge in marinade. Put in refrigerator for an hour.

Take out fish off marinade then put into rack placed on baking/broiling pan. Then bake inside preheated oven (450 degrees F) for about 12 mins for every inch fish’s thickness.

Baked Fish Cake Recipe


Baked Fish Cake Recipe

Ingredients:

1.5 lbs potatoes; peeled and sliced into chunks
1 lb of fillet (white fish)
Salt (for taste)
Pepper (black or white); ground fresh
2 Tbsps butter
2 Tbsps of oil
4 Tbsps milk
Peel of half a lemon; grated
2 tbsps of parsley; chopped fresh
1 tsp of anchovy extract (optional)
3 Tbsps of flour (all-purpose)

Instructions:

Submerge potatoes in saucepan containing water. Add salt when preferred. Heat ’til near boiling. Put fish above plate then cover fish with another plate.

When water boils, cover saucepan with plate containing fish then lower flame to avoid froth from running over. Continue cooking ’til potatoes are tender 10 to 15 minute. Then set aside uncovered.

Next, drain then mash potatoes and beat well ’til smooth. Add anchovy, parsley, peel, milk and butter. Preheat the oven (400 degrees F). Butter/oil baking dish/pan.

Pour available cooked fish juices into potato. Flake flesh off skin and discard bones. Add to potatoes, mixing well and adding some seasoning for taste.

Place fish mix dish/pan forming mound. Flatten top a bit and sprinkle little flour. Utilize spatula to shape little circle, 7″ diameter. Evenly coat surface with flour.

Trickle oil on cake then bake half a minute ’til well-browned. Cut in wedges and serve.

Baked Citrus Sword Recipe

Ingredients:

Citrus sauce (barbecue)
6 pcs of sword fish steaks

Instructions:

Prepare the citrus sauce; set on the side. Heat the oven (450 degrees F). Place the steaks on a 13×9x2 inch oven-proof dish. Pour a cupful of sauce above the steaks. Bake for 20-25 mins, uncovered. Serve while hot with the rest of citrus sauce.

Baked Cod With Spinach & Cheese Sauce Recipe


Baked Cod With Spinach & Cheese Sauce Recipe

Ingredients:

3 Tbsps of butter
1/8 tsp of nutmeg (ground)
2 Tbsps of flour
1-1/2 c of milk
1 c of cheese (Gruyere)
1/4 c of cream (heavy)
1 pc of egg yolk
Salt (to taste)
Black pepper (to taste)
1/8 tsp of cayenne pepper
2 c of spinach (fresh); rinsed and discard tough ones
2 Tbsps of shallots; chopped finely
4 pcs of cod fish steaks (6 oz each); skinned and deboned
1/2 c of wine (white)
2 Tbsps of grated cheese (Parmesan)

Instructions:

Melt (1 tablespoon) butter on a nonstick saucepan then add flour; whisk thoroughly till blended well. Add cream and milk; stir thoroughly using a whisk. Let it boil then add Gruyere; stir thoroughly till cheese melts.

Add yolk then stir vigorously using a whisk. Gradually add nutmeg, cayenne, salt & pepper; stir and let it simmer for a min. Cover then set on side, keeping it warm.

Place the rinsed spinach on a (large) saucepan then add in salt; cook above medium-high heat for 2 mins, stirring constantly, till wilted. Drain then squeeze excess liquid. Keep it warm; set on side.

Preheat oven at 450 degrees F. Butter one metal (baking) dish using (1 tablespoon) butter. Spread shallots onto the base of dish.

Arrange cod pieces atop and season salt & pepper. Pour above the white wine then cover dish using aluminum foil. Let it boil above the gas stove then place inside preheated oven; bake, about 5 mins.

Spread (1 tablespoon) butter onto the base of one large (baking) dish then spoon spinach above the buttered base then gently transfer cooked steaks above the arranged spinach. Reserve the wine/liquid from the baked dish.

Heat the wine/liquid till reduced by half; add onto cheese mixture/sauce. Let it boil, while stirring constantly using a whisk. Ladle above the steaks evenly. Sprinkle Parmesan and place inside a broiler. Broil till bubbling and browned, uncovered.

Baked Rock With Ginger-Lime Sauce Recipe

Ingredients:

1 & 1/3 lbs of rock fish fillets
2 Tbsps of khup
1/4 tsp of salt
Pepper for seasoning (black, freshly ground)
1.5 Tbsps of margarine or butter
1 Tbsp of ginger (fresh); grated finely
2 Tbsps of juice (lime)

Instructions:

Preheat oven (450 degrees F). Set fillets above rack placed in pan or use broiling pan then season using salt as well as pepper.

Then bake for 12 mins or ’til cooked through. Test if done. In saucepan, melt butter or margarine then put in khup, lime and ginger. Whisk ’til well blended. Pour on rock fillets then serve.

Ingredients:

5.5 lbs of bass (whole) or snapper (red); cleaned & washed
3 c of breadcrumbs (soft)
1/4 c of onion; chopped
2 Tbsps of butter
1/2 c of celery; chopped
1/2 c of green onion; chopped
1/2 c of almonds; chopped & toasted
3 pcs of eggs; beaten lightly
2 Tbsps of parsley (fresh); chopped
1 tsp of tarragon (dried)
8 Tbsps of butter
Salt
Pepper (fresh); ground

Instructions:

Preheat the oven (400 degrees F). Saute the onion with two tablespoons of butter ’til soft. Then add tarragon, parsley, eggs, almonds, pepper, celery and crumbs. Mix very well. The stuff into the fish cavity and then sew to seal.

Melt eight tablespoons of butter. Pour little amount of this on bottom of dish for baking lined with aluminum foil. Put fish then sprinkle using pepper and salt. Bake (1 hour 15 minutes) while basting often with the rest of butter (melted) or ’til fish is easily flaked with fork. Avoid overcooking.

Baked Fish With Sweet & Sour Onions With Couscous Recipe


Baked Fish With Sweet & Sour Onions With Couscous Recipe

Ingredients:

1/4 c of raisins
1/4 c of oil (olive)
2 lbs of onions; sliced
1/4 c of vinegar (red wine)
2 tsps of lemon zest; grated
1 Tbsp of orange zest; grated
Pepper and salt
4 pcs of salmon fillet (about 1.5 lbs)
2 Tbsps of butter
1 c of couscous (instant)
1/2 tsp of salt
1/4 c of nuts (pine); toasted
1/2 tsp of cinnamon (optional)

Instructions:

Soak raisins in water (warm 1/2 c) and leave to be plump. In huge pan fo frying on moderate fire, saute onions into oil ’til tender (20 mins).

Add drained raisins, vinegar as well as grated orange and lemon zests to the onions then cook for a minute. Season using salt (1 tsp) as well as pepper (1/2 tsp).

Preheat the oven (375 degrees F). Season fish fillet with some salt as well as pepper then top with onion mix. Bake for 7-10 mins. or ’til cooked. Serve topped with pinenuts.

Prepare couscous in 9″ dish for baking (square, 2″ deep). Boil water (1.5 c), cinnamon, salt as well as butter in saucepan on high fire. Empty saucepan contents into couscous then mix well.

Cover baking dish using foil then leave for 10 mins. Uncover then soften couscous using fork. Serves 4.
