Lemon Sauce For Fish Recipe
Ingredients:
Juice from 1 pc of large lemon
1/4 c of butter
1/2 tsp of salt
2 pcs of egg yolks (beaten)
1/2 tsp of pepper (black)
Instructions:
Strain the juice onto a saucepan. Add butter, salt, and pepper; beat thoroughly above moderate heat, don’t boil the mixture. When heated thoroughly, turn off the heat and add the yolks; mix thoroughly. Serve immediately.

Broiled Sword & Cucumber Sauce Recipe
Ingredients:
6 pcs steaks of swordfish (1/2 lb each)
1 c of cucumber
6 tbsps of butter
1/2 c of ghi
2 tbsp of anchovy paste
Pepper & salt
Instructions:
Combine anchovy and butter then rub on the steaks’ sides. Grease pan for broiling and broil steaks for 3 mins per side. Combine ghi as well as cucumber then pour onto the steaks and ready for serving.

Broiled Sword & Cucumber Sauce Recipe
Ingredients:
6 pcs of steaks (1/2 lb each)
Pepper (to taste)
1/2 c of clarified butter
6 Tbsps of butter
Salt (to taste)
1 c of cucumbers
2 Tbsps of anchovy paste
Instructions:
Mix anchovy and 6 Tbsps of butter then rub on steaks. Then season using pepper and salt. Grease pan for broiler then cook the steaks around three mins per side if they are 1″ thick.
Toss cucumber with butter (clarified) then pour on steaks. This recipe creates six serving portions.

Baked Rock With Ginger-Lime Sauce Recipe
Ingredients:
1 & 1/3 lbs of rock fish fillets
2 Tbsps of khup
1/4 tsp of salt
Pepper for seasoning (black, freshly ground)
1.5 Tbsps of margarine or butter
1 Tbsp of ginger (fresh); grated finely
2 Tbsps of juice (lime)
Instructions:
Preheat oven (450 degrees F). Set fillets above rack placed in pan or use broiling pan then season using salt as well as pepper.
Then bake for 12 mins or ’til cooked through. Test if done. In saucepan, melt butter or margarine then put in khup, lime and ginger. Whisk ’til well blended. Pour on rock fillets then serve.

Beer Sauce For Baked Fish Recipe
Ingredients:
1 c of sauce (medium white)
1 c of cheese (cheddar); grated
A tsp of mustard
A tsp of paprika
2 tsps of Worcestershire
1 c of beer
A Tbsp of capers
Ingredients:
Stir together white and worcestershire sauces, cheese, paprika as well as mustard on low flame ’til cheese becomes melted. Slowly pour in beer while constantly stirring. Put in capers. Best served hot alongside fillets (baked).

Fish Brown Sauce Recipe
Ingredients:
For the Seasoning Mix:
1/2 tsp of salt
1 pc of bay leaf (whole)
1/2 tsp of garlic powder
1/8 tsp of cayenne (ground)
1/4 tsp of pepper (white)
1/4 tsp of oregano (dried)
1/4 tsp of thyme (dried)
Others:
2 Tbsps of vegetable oil
1/4 c of onions; chopped finely
3 Tbsps of flour (all purpose)
4 tsps of tomato sauce (canned)
1 tsp of Worcestershire
2 c of hot stock (basic)
2 Tbsps of wine (burgundy)
2 Tbsps of softened butter (unsalted)
Instructions:
Combine bay leaf, salt, garlic powder, pepper, oregano, thyme, and cayenne inside a bowl. Set on the side.
Heat oil on a saucepan above medium-high heat till oil begins smoking, about 1-2 mins. Add (2 tablespoons) flour; whisk continuously using a (metal) whisk till roux becomes dark brownish red or slightly black, or for 2 mins.
Next, quickly add onions and reduce the heat into low; continue to cook and whisk for another min. Add tomato sauce; cook while stirring for a min.
Add mixture of seasonings and Worcestershire; cook for 2-3 mins while stirring continuously. Add stock and increase the heat into high; boil while stirring occasionally.
Once boiling, reduce the heat; maintain to simmer. Cook for 6-8 mins while stirring occasionally. Add (1 tablespoon) burgundy; stir then turn off the heat.
Combine remaining flour and butter inside a bowl then mix thoroughly till creamy and smooth. Heat sauce again above gentle heat; slowly add mixture of butter while whisking continuously till blended well.
Allow to simmer for 10 mins, while stirring occasionally. Add remaining burgundy then turn off the heat. Discard the bay leaf and serve at once. Serves 6.
